Agreed, no Eataly at Oakridge because of TimeOut Market.
But Simons would be a catch and a better retail environment than downtown (wrt theft, security, vandalism, etc.).
It would also introduce a more affordable price point to Oakridge.

Apple is 'stuck' in other high-end malls like Yorkdale, South Coast Plaza, Stanford Shopping Centre, Aventura Mall (Miami) so it's not inconceivable they would do so here.

There's a spot on Level 2 of Phase 1 that is open to the outdoors (for a prominent frontage)
and for which no tenant has been announced.
I think Apple could be in that space.
I don't think construction of Phase 2 has been announced, so a unit in Phase 2 would still be a ways off.
