It is pretty incredible how Lima has exploded onto the international culinary map over the last decade.

Such fanciness. I love when restaurants in places like Shanghai and Singapore are named ‘Ultraviolet’ and ‘Burnt Ends’.

This list is a bore.

Was my thought as well. The lack of US/CA representation here is certainly suspect.

I think Canada actually really good dining at the middle class budget level (like $20-$40 for a main course) but fine dining is it's own thing that's kinda irrelevant to me so idk.

There’s actually 3 listed for California. 2 in SF and 1 in Healdsburg in Sonoma wine country. Pretty decent representation for a single state.

Anyone else smitten and more curious about the names of these restaurants than their food, or is it just me?

Casa do Porco is not expensive. I guess you can have a complete meal there for less than R$ 150 (US$ 30) or so.

-------------------------------

The lack of North American representation is a joke, right? It comprises almost 20% of the list. I guess people got too used to those "international" rankings where half of it is American/Canadian.

I actually think he might be right. The list is uh, strange. Even the North American selections are obscure, casual, overtly ethnic places, which is fine, but it's rather odd. It almost reads like a woke parody; an indictment of French, Japanese and any formal dining. Kinda like the anti-Michelin.

The best known, most revered fine dining destination restaurants in North America are all absent. No Eleven Madison Park, Per Se, Daniel, Masa, Brooklyn Fare, Alinea, French Laundry, Saison, etc.?

I’m reminded of President Frank Underwood’s favorite place in House of Cards: Freddie’s BBQ Joint. A notch above the Donald’s orders of Big Macs and fries on Air Force One.

Any list excluding any of the bolded restaurants is highly dubious

Alinea always made the list in the past.

It must cost a fortune to eat at these places.

From what I understand, these lists are historically biased towards French cuisine and technique, "new" American, and Japanese cuisines. It's good to see that there are other ethnic cuisines that are starting be recognized as "elevated".
