There is the potential to start service from SLC to Tokyo's Haneda Intl. as well if capacity/demand proves viable.
It sounds as though service to Lima or Santiago is more dependent on gate capacity at their airports, rather than SLC. Although, there is not enough widebody capacity at salt lake currently either. European frequency is pretty maxed out at this point with up to 4 daily flights next summer to Amsterdam, London, Paris, and Frankfurt.
Also expect daily service to resume/be added to most remaining small-midsize cities in the eastern US currently not served by SLC as gate capacity doubles in the next few years.

Delta is Opening a Second Sky Club® in Salt Lake City in 2025.

The airport completed construction of the new 900,000-square-foot Concourse A in September 2020. Concourse A serves Delta exclusively with the carrier occupying all of the 22 gates that are scheduled to open by October 31st. Delta operated over 230 flights from Salt Lake City to around 90 global destinations this summer including added frequencies to Austin, Charlotte, Nashville, Philadelphia, and more. Concourse A has a Sky Club® currently and the new location will complement the gorgeous existing lounge.The new Sky Club® will be located in Concourse B and will provide travelers with access to a more convenient lounge near the B Gates. No word on the Sky Club’s® size or proposed amenities has been released.
The Salt Lake City Tribune reports that Delta employs more than 5,000 people at Salt Lake City International Airport (SLC) and it signed a lease extension last year that guarantees it will maintain its hub there until at least 2044. Construction on Concourse B will be fully complete by 2027 and Delta will occupy more than one third of the concourse by that time.
