In my city of Gatineau, Quebec the oldest is called the British Hotel. It's in the westermost part of Gatineau in what was once the city of Aylmer. It dates back to 1834 and is said to be the oldest such establishment in Canada west of Montreal. It hosted Edward VII among other notables it's seen during its history.
It was refurbished a few years ago and is now a pretty hip place.
